Recipe for Success
“We promise! As soon as the Laiterie de l’Outaouais starts up, we will be able to offer our own milk chocolate to the people of the Outaouais. And it will certainly be different from others! Nothing on the market will come close, since we’ll have our own recipe. We will be able to brag that we have, right here, THE BEST milk chocolate in the province… maybe in the world!” Georges Émond, Laiterie de l’Outaouais CEO.
As soon as the Laiterie de l’Outaouais re-start committee was created in 2006, Mr. Émond used his utmost skill and expertise in the field of food transformation to develop a chocolate milk recipe unique to the Laiterie de l’Outaouais.
“Not too sweet, not too dark… with lots of bubbles, a rich and smooth texture, like chocolate mousse. And nothing harsh like we see on the market, something natural and delicate. Those were my criteria for developing a recipe.”
First, a natural cocoa producer had to be found in Quebec. Then, twelve cocoa powder recipes were presented, checking off all the wanted characteristics. Testing was done at the Centre de recherche alimentaire (CRDA) in Saint-Hyacinthe, a plant where businesses can do industrial tests before launching new food products
“The process was far from easy. In January, when I went to the CRDA to try the 12 chocolate milk recipes, we asked a local producer to provide us with milk. It was so cold I had to stop and buy blankets to keep the milk from freezing!”
Finally, one recipe showed promised, but still needed to be tweaked to make the chocolate milk exceptional. Time was running out and the Laiterie needed to move forward, even without the benefit of organizing a consumers’ focus group. It all came down to Mr. Émond’s taste buds!
The last test was conclusive. Production started on the very first chocolate milk from the Laiterie de l’Outaouais.
“It’s unanimous. We have found the ideal recipe to create the best chocolate milk the Outaouais has ever known. It may be the best in the province, even the world! Today, I think of how far the Laiterie de l’Outaouais has come, and our chocolate milk is definitely one of our crowning achievements. I know people who make a point of bringing our milk back home to Montreal after a visit to the Outaouais,” concludes Mr. Émond.
